Ingredients -
    Ingredients for the Saran -
  • 2 cup coconut
  • 1 cup Jaggery powder or grated
  • 1 tsp cardamon powder
  • 1/2 tsp Salt
  • Ingredients for the Ukad [ Outer Covering]
  • 2 cup Water
  • 2 cup Rice flour or special modak flour
  • 1/2 tsp Salt
  • 4 tsp Milk
  • 1 tsp Ghee
Instructions -
  1. Instructions to make the Saran -ukadiche modak

    Making the Saran -

    1. Take  a Pan. Add coconut. mix.
    2. Add Jaggery. mix
    3. Add cardamon powder, salt to taste. mix
    4. mix this entire mixture till the jaggery melts in the coconut.
    5. Add 1tsp of Rice flour. This will thicken the mixture and remove all the excess water.
  2. Instruction on Making the Ukad [outer covering]
    1. Take a pan.
    2. Add 2 cups of water.
    3. Salt to taste.
    4. 4tsp of milk.
    5. Bring all this to a nice boil.
    6. Add 2 cups of rice flour or special modak flour.
    7. mix well. The mixture will be crumbly.
    8. keep stirring till its blended properly.
    9. switch of the flame and cover this with a lid.
    10. keep this for about 10 minutes so that the crumbly mixture cooks in the steam.
    11. After 10 minutes. knead this crumbly mixture into a soft dough.
    12. Make use of water on your hands, wet your hands, palm.

    14. Knead the dough to a nice smooth dough.
    15. In the end, add 1tsp of ghee or oil on your hands and knead the dough again.
    16. It should be soft and smooth dough.
    17. Now its ready for making modaks.
    18. cover the dough with a cloth so that it does not become dry.
    19. Knead the dough immediately when its hot do not wait for it to get cold.
    20. make use of modak moulds or silicon modak moulds and make mould the modaks with its help.
    21. Steam all the moulded modaks for about 10-15 minutes.
    22. Serve hot.
Note
  1. Try to use special Modak flour if not available you can use the regular rice flour.
  2. make use of little oil while kneading the dough. It will help in kneading. 
  3. Knead the crumbly mixture when its hot. Don't wait for it to get cold.
  4. Cover the kneaded dough with a cloth so that it does not become dry.
