Instructions to make the Spongy Dahi Vada

Method -
- soak the Urad Dal and Yellow moong dal overnight.
- Next day, make a smooth paste with green chillies, Jeera, Turmeric, salt and little water around 4-5 tbsp. You won't require much water as the lentils are soaked over night so they are soft to grind.
- After grinding it into a smooth paste, with an electric hand blender blend it again for 10 minutes till the entire mixture becomes more soft and fluffy. The entire mixture will fluff [rise] a bit and the color will change.
- Take a small bowl with water. Now with a teaspoon add the fluffy mixture to the water. The mixture will float in the water. This is a test to see if you have blended the mixture well for 10 minutes and if the mixture has become fluffy enough that it floates. This is what we want. The mixture should float in that small bowl of water. This is the indication that we have blended enough. If it does not float then again go back and blend it with the electric hand blender for 5 minutes. You have to do this test. The fluffy mixture will make sure that the vadas will become spongy. This is a very important step so please don't miss it.

- Next fry the vadas either deep fry or shallow fry them as per your wish. The vadas should be small so use a table spoon. If you want less oil then shallow fry them in Appe Pan.
- Next take a big bow of water and soak the fried vadas in it to remove excess oil. you need to soak it in water for about 10-15 minutes.
- After 15 minutes remove the excess water and press the vadas in your palm and keep aside.
- Transfer the vadas into yogurt mixture. You can add 1tsp of sugar, salt as per taste to the yogurt and mix well before adding the vadas.
- Soak for about another 10-15 minutes in the yogurt mixture.
- While serving, garnish it with red chilli powder and chaat masala as per your liking.
- Yummy, lip smacking, soft spongy tasty vadas are ready to serve and eat.
